Cooking in bulk batches helps commercial kitchens to save time, labor, and money. By purchasing foods in larger quantities, food service establishments are able to obtain more favorable pricing while feeding large groups of people.
One critical element that cannot be ignored in batch cooking, though, is food safety. When cooking foods in large quantities that will be served later, making sure that food doesn’t enter the danger zone while cooking and holding is an absolute imperative. Thanks to its extremely accurate and reliable food probe, along with its built-in cooking intelligence, the RATIONAL iCombi Pro is able to insure that foods are kept at a safe temperature until they can be removed from the unit once cooking is complete.
Cooking foods in bulk using an overnight cook and hold cycle on the iCombi Pro could not be more simple. When it comes to preparing large quantities of ground beef logs, for example, the RATIONAL iCombi Pro allows kitchen staff to simply “set it and forget it” until the next morning, freeing them up to concentrate on other tasks while the iCombi Pro safely cooks the meat overnight.
The iCombi Pro stores hundreds of recipes, so staff need only click a single button to cook consistently every time. Scrolling through the named programs on the iCombi Pro, the user will find ‘Overnight Beef Log’, and simply pressing this program button will initiate the pre-heating process. Once the unit has pre-heated, the user will be instructed to load the product.
Pre-packed ground beef logs can be placed into a 12” x 20” pan and loaded into the iCombi Pro.
(NOTE: An additional benefit of cooking ground beef in their packaging is that staff are not having to work in direct contact with raw meats or meat juices.)
After loading the ground beef logs into the unit, the user will then insert the food probe into one of the ground beef logs, close the door and let the iCombi Pro take care of the rest. The iCombi Pro will cook the meat in its own juices until it has reached the safe desired final cooking temperature. Once the cooked meat is at desired temperature, the unit will automatically convert to a holding mode so that the ground beef logs can be safely held in the unit until the staff returns the next day.
The next morning, the staff will simply remove the pans from the unit, remove the cooked ground beef from its packaging, and crumble the cooked ground beef for use in a variety of recipes, including spaghetti meat sauce, tacos, burritos, enchiladas and more.
