Great served any time of day, grits are a staple in Southern cuisine. Save time in your restaurant or school by cooking them overnight in the RATIONAL iCombi Pro oven

Perfect For Any Meal

Capable of being served savory or sweet, grits can be enjoyed morning, noon, or night. Similar to polenta, grits are synonymous with the southern portion of the country and are even the official prepared food of the state of Georgia.

Grits are versatile enough to be served fried in patty form, complemented with add-ins like shrimp or cheese, or even included in a casserole. Don't be afraid to serve them with just a dash of butter though. No matter how they're served, they're sure to be a hit.

A Simple Way To Make Grits

Overnight cooking is an easy, labor-saving way to prepare foods. And with the RATIONAL iCombi Pro, it can be done safely by simply setting it and forgetting it until the next day when staff return to the kitchen.

Able to store hundreds of recipes, the iCombi Pro only needs a click of one button to get a consistent cook every time. And making grits overnight in the RATIONAL can't be any simpler.

Start by pouring water in a hotel pan, adding the grits, and giving them a stir. On the iCombi Pro, scroll through the programmed recipes and select 'Grits Overnight' (if you don't have this already programmed in your oven, reach out to your Pace Reps representative so they can help you out). Then simply pre-select the start time for the unit to start cooking. Load the pan into the iCombi Pro, close the door, and let the iCombi Pro do the work.

When you return the next morning, remove the fully cooked grits from the unit, add any cheese, butter or other flavor items you're including and give the grits a stir. It's just that simple to have tasty grits ready at any time of the day.
